The Molecular Kitchen
Many will tell you that cooking is an art. Which of course is true at some length. However, I will argue that cooking is also a scientific experiment! In fact, if you think carefully, cooking is nothing but a chemical reaction. A reaction where the product is a delicious meal - sometimes with a full of appetite-raising aroma or sometimes spectacularly colorful. To explore the rich chemistry in cooking, a few years ago, I started a YouTube Channel, called The Molecular Kitchen. Here I mostly talk about chemistry in our everyday life, particularly in kitchen and occasionally about our research life!
হঠাৎ বঙ্কিমচন্দ্র

জীবন ভাত-তরকারির ন্যায় বড়ই একঘেয়ে হইয়া উঠিতেছে। ল্যাবরটরি-গৃহ। গৃহ-ল্যাবরটরি। নতুন বছর আসিতেছে। ভাবিলাম কিছু পরিবর্তন আবশ্যক। তাই সেন্ট্রাল স্কয়ারের দোকান হইতে উদর ঠাসিয়া পোলাও-চিকেন-তন্দুরি এবং জিলাপি খাইয়া আসিলাম। কিন্তু বদহজম হইয়া গেল। আসিবার পথে সিভিএস ফার্মাসি হইতে গ্যাসের বড়ি কিনিয়া খাইলাম। বাড়িতে আসিয়া ভাবিলাম পরিবর্তন করিব। সোফাটি কয়েক বছর ধরিয়া দক্ষিণের জানলায় লাগানো রহিয়াছে।উহাকে পুবের দিকে লাগাইলা দিলাম। ভাবিলাম শীতের সকালে খাসা রোদ্দুর আসিবে। কিন্তু কনকনে ঠাণ্ডা আসিতে লাগিল। ভাবিয়াছিলাম চুল আর কাটাইব না। সাধারণ বাঙ্গালীর ন্যায় দেখিতে লাগিবে না। বড় চুলে আইনস্টাইন-নিউটন-ডারউইনদিগের ন্যায় বিজ্ঞানী লাগিবে। কিছু পরিবর্তন হইবে। কিন্তু আয়নায় দেখিলাম বাংলা সিনেমার গুণ্ডাদের ন্যায় বখাটে লাগিতেছে। গৃহিণীও সেইরূপ মন্তব্য করিল। তাই মুখ ব্যাজার করিয়া রহিলাম। ....
